PSSSSST..

We know it’s hard to wait.. but we recommend you allow freshly roasted espresso to degas for 5 to 10 days. This is crucial for achieving the best flavor profile! During the roasting process, coffee beans release carbon dioxide(CO2), which continues to be emitted even after roasting is complete. This degassing period is particularly important for espresso because the high-pressure extraction method is sensitive to the presence of trapped gases. If espresso is brewed too soon, the excess CO2 can lead to an uneven extraction, resulting in a sour or bitter taste. By giving the beans time to rest, you ensure that the gases have dissipated, allowing the true flavors of the espresso to shine through, providing a smoother, more balanced cup. This extended rest period is longer than what might be necessary for other methods like drip coffee, highlighting the unique nature of espresso preparation.**
